Raw Vegan Maple & Pecan Pie

This really is the ultimate, indulgent and moreish dessert, which is super easy to make and super impressive to serve and I think, tastes very authentic.

  1. 100g pecan nuts
  2. 100g pitted dates soaked overnight or for a few hours
  3. 130g of cashew butter
  4. 120ml coconut oil
  5. 175g pitted soaked dates(ideally overnight as they blend better).
  6. 1/2 tsp vanilla extract
  7. 1 tbsp maple syrup
  8. 45g shredded coconut
  9. Pinch of salt

Construction: Whizz the dates and nuts until it combines together, like a biscuit cheesecake base.  Press into a pie dish and put in the fridge to set for a few hours. For the filling blend all the other ingredients together until smooth and spoon on top of the base. Decorate with additional pecan nuts and coconut flakes and pop in the fridge for a few hours until it sets. EAT!
