I love the simplicity of this meal and the freshness of the basil pesto, it tastes moreish, hearty and filling and can be stirred into some pasta, used as a salad dressing or topped on some cauilflower steaks as I have done here. The cauliflower steaks are also amazing on a BBQ as the cauliflower takes on a really nice smoky and chargrilled flavour. Continue reading “Brazil Nut Pesto & Cauli Steaks”

This really is the ultimate, indulgent and moreish dessert, which is super easy to make and super impressive to serve and I think, tastes very authentic.
Vegan Salted Caramel Bites
Sugar seems to be the big debate of the moment, and I personally haven’t and wont be eliminating it from my diet completely. I am very much in the “everything in moderation” camp, and life is too short not to sneak in a cheeky bar of chocolate every now and then. However, I am also very much in the “know what goes in your food” camp, and trying to take control of this as much as possible can only be a good thing. These bars are a perfect sweet treat loaded with natural sugars and healthy fats and do feel pretty indulgent, as well as mega tasty. Continue reading “Vegan Salted Caramel Bites”
Thousand Island Salad Sauce
This salad dressing works with lots of salads and on top of burgers. It’s a tangy, creamy and sweet dressing, a bit like thousand island I guess. It is quite thick so works well as a dip too. Continue reading “Thousand Island Salad Sauce”
“Eat Beet, not Meat”..Balls
Kind of a weird one making this if you are veggie or vegan. Rolling the beetroot mixture into beet balls is like rolling mince beef, which after a few veggie years freaked me out a wee bit. But the taste far outweighs this and so they pack a real hearty, meaty punch. Continue reading ““Eat Beet, not Meat”..Balls”
Miso Lunch Noodle Pots
I feel that it is a bit of a cheat putting this on here as I really don’t have a recipe as such. I make it up as I go along dependent on what I am making for dinner the night before and what we have in the fridge.
For the best part of a year I have been fuelling me and monkey chopswith “swizzle lunch pots”, a one pot, no fuss, no mess, healthy dish! Continue reading “Miso Lunch Noodle Pots”
