This salad dressing works with lots of salads and on top of burgers. It’s a tangy, creamy and sweet dressing, a bit like thousand island I guess. It is quite thick so works well as a dip too.
- 1/2 cup soaked cashew nuts in water
- 3 tbsp ketchup
- 1 tbsp olive oil
- 3 tbsp of dill or sweet pickle relish
- 2 tbsp grated white onion
- 2 tbsp lemon juice
- 2 tsp miso
- 1 tsp garlic powder
- 1 garlic clove
- 2 tsp djion mustard
- 1/2 tsp of tabasco or sriracha sauce
Construction: Once the cashew nuts have had enough time to soak, basically whizz all the ingredients together until you have a smooth, creamy sauce. If you don’t want it quite so thick, add more water. It seems it really is a lot of ingredients, but it does make quite a lot and lasts in the fridge for a good few days.
