  3. 1/2 cucumber (seeds removed) and diced or into batons
  4. 2 cups lettuce shredded (i like something crunchy)
  5. 3 spring onions chopped finely (green bits only)
  6. 120g udon or soba noodles
  7. 2 tbsp toasted seasme seeds
  8. 1 sheet shredded nori (optional)

Dressing

  1. 1/3 cup tahini
  2. 1/4 warm water
  3. 2 tbsp rice wine vinegar
  4. 1 tbsp soy sauce
  5. 1 tbsp peanut butter
  6. 1 tbsp dark agave nectar
  7. 2 tsp seasame oil
  8. 2 tsp grated ginger

Construction: Add all the dressing ingredients into a blender and whizz until smooth. Taste and add more sweetness with the agave if too tangy or soy if you want a little saltier. Chop the lettuce, tomatoes, spring onions and cucumber and set to one side until the noodles are cooked. Cook the noodles until they are still al-dente and rinse under cold water and toss in some seasame oil until they are lightly coated. Put chopped salad leaves in bottom of a bowl, add noodles on top and all the other salad ingredients. Top with tofu and the peanutty dressing.
