Peanut & Seasame Noodle Doodles

You can basically make any salad for this, they key is in the peanutty sauce and noddles, but the randomness of the salad ingredients used, actually work. Ingredients below make 2-3 salads depending on how hungry you are. Or in Monkeychops’ case, one giant salad all for him!

Noodle Doodle Salad

  1. Pack of smoked firm tofu (optional)
  2. Pack of small ‘on the vine’ tomatoes chopped
  3. 1/2 cucumber (seeds removed) and diced or into batons
  4. 2 cups lettuce shredded (i like something crunchy)
  5. 3 spring onions chopped finely (green bits only)
  6. 120g udon or soba noodles
  7. 2 tbsp toasted seasme seeds
  8. 1 sheet shredded nori (optional)

Dressing

  1. 1/3 cup tahini
  2. 1/4 warm water
  3. 2 tbsp rice wine vinegar
  4. 1 tbsp soy sauce
  5. 1 tbsp peanut butter
  6. 1 tbsp dark agave nectar
  7. 2 tsp seasame oil
  8. 2 tsp grated ginger

Construction: Add all the dressing ingredients into a blender and whizz until smooth. Taste and add more sweetness with the agave if too tangy or soy if you want a little saltier. Chill in the fridge until serving. Chop tofu into strips and lightly fry in some soy sauce. Put to one side until assembling salad. Chop the lettuce, tomatoes, spring onions and cucumber and set to one side until the noodles are cooked. Cook the noodles until they are still al-dente and rinse under cold water and toss in some seasame oil until they are lightly coated. Put chopped salad leaves in bottom of a bowl, add noodles on top and all the other salad ingredients. Top with tofu and the peanutty dressing. Sprinkle on the toasted sesame seeds and shreddded nori sprinkles.
