I love the simplicity of this meal and the freshness of the basil pesto, it tastes moreish, hearty and filling and can be stirred into some pasta, used as a salad dressing or topped on some cauilflower steaks as I have done here. The cauliflower steaks are also amazing on a BBQ as the cauliflower takes on a really nice smoky and chargrilled flavour. Continue reading “Brazil Nut Pesto & Cauli Steaks”

Thai Noodle Salad
This is a really fresh, light and zingy salad. If you are not a fan of tofu or don’t have any in, then don’t worry too much, There is plenty enough here to fill you up without it. When you read the recipe it does seem a bit of a faff, but it is actually really easy to put together and well worth it. Continue reading “Thai Noodle Salad”

But the taste far outweighs this and so they pack a real hearty, meaty punch. Continue reading ““Eat Beet, not Meat”..Balls”
Aubergines, Mint, Pomegranate & Tahini Dressing
Out of all the recipes I cook, or should I say, attempt to cook, this is by far one of my favourites. It’s the only meal I make that I’ll clear my plate on and monkeychops gets no extras, much to his disappointment. Like most of the meals I make this is really easy.
