Everyone remembers bananaman right?!?! Well I do. But if your name isn’t Eric and they don’t help you fight evil, these great bars will at least give you a sustained energy release! They are filling and packed full of flavour and are perfect as a breakfast bar or post workout snack.
- 2 cups oats
- 1/3 cup quinoa
- 1 1/2 cups mashed very ripe bananas
- 1 large egg
- 1/3 cup of toasted walnuts or pecans
- 1/2 cup dried cranberries, raisins, cherries or blueberries
- 1/4 chopped dark chocolate
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/2 fine sea salt
- 2 tsps vanilla
- 1/4 cup honey/agave or maple
- 1 tbsp coconut or vegetable oil
Construction: Cook the quinoa in 1/2 cup water, bring to the boil and simmer for 10 minutes, before allowing it to cool in bowl. Mix the oats, cinnamon, baking powder and salt together. In the cooled quinoa, mix in the mashy bananas, oil, honey egg and vanilla. Then add into the oat mixture and combine until all oats are coated. Stir in the nuts, chocolate and fruit, until all blended together. Spread the mixture evenly into a baking pan lined with baking paper and cook in the oven for 25-30mins at 160 degrees or until golden on top. Cool and chop into bars- banana man bars are ago! Bars can be kept in the fridge wrapped for a week or so, or frozen until required.
