You can basically make any salad for this, they key is in the peanutty sauce and noddles, but the randomness of the salad ingredients used, actually work. Kind of a weird one making this if you are veggie or vegan. Rolling the beetroot mixture into beet balls is like rolling mince beef, which after a few veggie years freaked me out a wee bit. Vegan Ginger, Lime & Green Tea Bars
These are another cracking whole food energy bar, bursting with goodness, super easy and cheap to make.
I found the green tea powder a bit scary the first time I used it. It’s quite an intense sludgy colour and my chump of a husband accidentally over dosed on it in a smoothie recently, which I have to admit I found rather amusing. However, when all combined and cooked together they taste amazing, like really.

Out of all the recipes I cook, or should I say, attempt to cook, this is by far one of my favourites. It’s the only meal I make that I’ll clear my plate on and monkeychops gets no extras, much to his disappointment. Like most of the meals I make this is really easy.
