Vegan Ginger, Lime & Green Tea Bars

These are another cracking whole food energy bar, bursting with goodness, super easy and cheap to make.

I found the green tea powder a bit scary the first time I used it. It’s quite an intense sludgy colour and my chump of a husband  accidentally over dosed on it in a smoothie recently, which I have to admit I found rather amusing. However, when all combined and cooked together they taste amazing, like really.

Ingredients

  1. 1/2 Cup Porridge Oats
  2. 1/2 Cup Brown Rice Cereal
  3. 2/3 Cup Chopped Apricots or Raisins
  4. 1 1/3 Cups Of Chopped Cashew Nuts or Pistachios
  5. 1/3 Brown Rice Syrup or Corn Syrup
  6. 1 1/2tbs Green Tea Powder/Matcha Powder
  7. 1tsp Ground Ginger
  8. 2tsps Lime Juice
  9. 1tsp Lime Zest

Construction: Mix the oats, dried fruit and nuts in a bowl. In another, combine the syrup, lime juice and zest, ginger and green tea powder. Pour the mixed liquid over the oatty mixture and mix until all the mixture is coated. Transfer the mixture into a lined pan, about 8 in square and bake in the oven at 160 degrees C for around 20 minutes or until golden at the edges. Allow to cool before chopping into bars or bitesize chunks. A couple of times I have made these they have crumbled a little, so I have used them as a crunchy zesty granola type thang which works equally well. Enjoy!
