Vegan Salted Caramel Bites
Sugar seems to be the big debate of the moment, and I personally haven’t and wont be eliminating it from my diet completely. I am very much in the “everything in moderation” camp, and life is too short not to sneak in a cheeky bar of chocolate every now and then. However, I am also very much in the “know what goes in your food” camp, and trying to take control of this as much as possible can only be a good thing. Coconut & Chocolate Protein Balls
These are sweets that actually taste like a bounty (Mound bar In the US), but healthy, which for a husband that loves bounties, is a major win.
In a recent race of his, when he was flagging at 30 miles, I sneaked a bounty bar into his bag on a bottle swap at a checkpoint. Apparently, when found, he reacted like he had actually WON the race. Anyway, enough said, it was time to create a healthy version and an alternative race fuel for my boy.
Vegan Ginger, Lime & Green Tea Bars
These are another cracking whole food energy bar, bursting with goodness, super easy and cheap to make.
I found the green tea powder a bit scary the first time I used it. It’s quite an intense sludgy colour and my chump of a husband accidentally over dosed on it in a smoothie recently, which I have to admit I found rather amusing. However, when all combined and cooked together they taste amazing, like really.
Swizzler’s Marvellous Muffins
I really like muffins, or should I say, I like the idea of them. However, I’m always disappointed with any I’ve tried. They are always too sweet, stodgy or greasy and hugely calorific. I’ve been experimenting with different combinations the last few weeks and these were our Sunday morning treat- dark chocolate and banana made with spelt four.
