Swizzler’s Marvellous Muffins

I really like muffins, or should I say, I like the idea of them. However,  I’m always disappointed with any I’ve tried. They are always too sweet, stodgy or greasy and hugely calorific.  I’ve been experimenting with different combinations the last few weeks and these were our Sunday morning treat- dark chocolate and banana made with spelt four. 

Despite both the banana and chocolate they taste surprisingly savoury. I also had run out of caster sugar today so used soft brown sugar, which worked just as well, if not better.

  1. 300g Spelt Flour
  2. 100g Sugar
  3. 2tsps Baking Powder
  4. 150ml Natural or Soya Yoghurt
  5. 150ml Soya Milk
  6. 2tbsps Honey
  7. 2tsps Cinnamon
  8. 1Egg
  9. 60ml Melted Coconut Oil
  10. 2 Mashed Bananas
  11. 50g Chopped Dark Chocolate
  12. Some extra Porridge Oats

Construction: Mix the baking powder, flour and sugar in a bowl. In another, mix the yoghurt, milk, egg, honey and coconut oil. Add in the mashed bananas and chocolate chopped into small pieces. Combine the wet mixture into the dry and mix together. Spoon into a muffin tray lined with paper cases and sprinkle with some porridge oats. There is enough for 12 muffins. Cook in the oven for around 20mins or until a skewer comes out clean. Cool the muffins on a rack or until you can wait no longer to scoff!
