First off, don’t be put off by the title!! Yes it contains a tin of chickpeas, but you really don’t taste them. If you like nutty, seedy, tasty energy bars then these are definitely for you, ideal for a lunchbox snack or to take out on a run. They are a go to for monkeyboy on his long runs and seem to sustain him as well as any shop bought energy bars, but without the sugar, saturated fats, crappy proteins and sickly overload. The ginger in them has been a recent addition, which tastes great and also has good anti-inflammatory properties.
Swizzler’s Marvellous Muffins
I really like muffins, or should I say, I like the idea of them. However, I’m always disappointed with any I’ve tried. They are always too sweet, stodgy or greasy and hugely calorific. Out of all the recipes I cook, or should I say, attempt to cook, this is by far one of my favourites. It’s the only meal I make that I’ll clear my plate on and monkeychops gets no extras, much to his disappointment. Like most of the meals I make this is really easy.

Beetroot Fritters
Beetroot over the years seems to have been banished to the back of the fridge in an out of date pickled jar, or found cubed in random supermarket salads. Not in this house I tell you, not in this house. I make brownies with it, houmous, stews and risottos. Ive got to be honest I don’t ever roast my own, unless my allotment wielding neighbour has a surplus. Roasting your own does taste great, but it takes far too long to cook and always seems to stay on the wrong side of hard for me. So shop bought, unpickled it is.
Vegan Whipped Coconut Cream & Berry Tart
Ok. My picture for this might not be the best, but it really is no reflection on how awesome this tastes. It proper tastes like a full fat, creamy, coconutty, sumptuous cheesecake and the best bit….it involves no cooking. Yes, it’s raw. I’m not a raw food expert (yet) but, the sheer mention of raw food, seems to have people running for the hills, apart from my faithful food testing husband ( or the “monkeyboy” as he is known). Every dish I make seems to be his favourite, like ever.
